Great Foods for A Great Independence Day

 Triple Chocolate Mess

1 package chocolate cake mix
1 pint sour cream
1 large package instant chocolate pudding
1 small bag chocolate chips
3/4 cup oil
4 eggs
1 cup water

Spray crock-pot with Pam. In bowl, mix all ingredients until smooth. Pour into crock-pot. Bake for 6 to 8 hours on low. Serve warm in bowl with vanilla ice cream.

Mexican Dish

3 pounds ground beef
28 ounce can tomatoes
16 ounce can tomato sauce
2 packages chili sauce mix
1 1/2 - 2 cups water
Fritos
Cheese, grated
Lettuce, cut
Fresh tomatoes, diced
Onion, diced
Sour cream (optional)
Salsa (optional)

Brown ground beef and drain. Add can tomatoes, tomato sauce, chili sauce mix and water. Simmer for 15 to 20 minutes. In individual dishes, place fritos, cover with meat
mixture. Layer cheese, lettuce, fresh tomatoes and onion last. Top with sour cream and salsa if desired.

Chocolate Pie

2 or 3 squares bittersweet chocolate
1 condensed milk
1 Oreo cookie pie crust
1/2 cup pecans, roasted and chopped
1 chocolate pudding mix
1 cup milk
8 ounces whipped topping

Melt chocolate in the microwave. Add condensed milk. Mix well. Pour into pie crust. Top with pecans. Mix pudding mix with milk. Add 3 tablespoons whipped topping to pudding mixture. (This is supposed to be thick.) Pour on top of pecans. Top with remaining whipped topping.

World Tour Chocolate 
Pudding Cake

1 package Devil’s Food cake mix
1 package instant chocolate pudding mix
1 cup sour cream
1 cup whole milk
1/2 cup vegetable oil
1/2 cup water
4 eggs
3 cups semisweet chocolate chips
6 tablespoons butter
1/2 cup pecans, chopped

Preheat oven to 350°. Grease and flour a 10-inch Bundt cake pan. In large bowl, combine cake and pudding mixes, sour cream, milk, oil, water and eggs. Beat on medium for 4 minutes, add 2 cups chocolate chips. Pour batter into pan and bake for 40-50 minutes. Test for doneness. Turn out on a wire rack and let fully cool. Melt butter and remaining chips in a double boiler or microwave. Stir until smooth. Drizzle on cake. Sprinkle with pecans.

Sour Cream Cornbread

1 cup self-rising cornmeal
1 egg
1 cup buttermilk
3 or 4 tablespoons sour cream
3/4 cup cheese, grated
2 tablespoons shortening, melted

Mix well cornmeal, egg and buttermilk. Add sour cream and cheese. Mix well. (If it seems too thick, add more buttermilk.) Pour into greased hot skillet and bake at 400° for 25 to 30 minutes or until golden brown.
