National Pork Month

 Pork Chop Corn Casserole

4 pork chops 1 can cream style corn
5 bell peppers, sliced
1 can cream style corn

Brown pork chops in skillet. Drain grease. Add bell pepper. Pour corn over chops. Cook for 20 to 25 minutes on simmer.

Smoked Sausage Casserole 

2 pounds smoked sausage, cut into lengths
1 teaspoon margarine
1 onion, cut into wedges
2 16-ounce cans sauerkraut
2 medium apples, cut into wedges
4 medium potatoes, cut in half
1 cup apple juice
Salt and pepper to taste

Brown sausage in margarine and put into a casserole dish. Arrange onion, sauerkraut, apples and potatoes around sausage. Top with apple juice, salt and pepper. Cover and let simmer over low heat for 30 to 40 minutes or until potatoes are done, stirring once during cooking time.

We didn't get any recipes for this month. So, since it's National Pork Month, I have selected some from our cookbook Southern and Then Some.

The counties selected for October are: Bullock, Cherokee and Washington. If you have any recipes (yes, you can send more than one!) that you would like to see in the Cooperative Farming News, please send them to us. We need to receive them by the 15th of each month. If you e-mail them, please include a mailing address. This will let us know where to send the cookbook should you win. Also, please include which Co-op you shop at.
